This is the last review of the Dovetail Brewery tabernacle takeover month, where SmokeBeerMinistry reviewed 4 different beers from Dovetail that are all smokebeers in some capacity. And this review in particular spilled into the next month because I didn’t get this written up fast enough, but that doesn’t diminish anything from the pheasant experience that this smoky sour beer brings to the table. Upon opening and pouring this beer, you’ll detect sour notes, good sour notes (oxymoron?) but not so much smoke, however. This beer has the kind of sour vinegar taste you find in one of those fancy oil and vinegar stores, with the dainty little bottles that you fill up with help from an employee (because they’re not cleaning up another customer’s mess), and then pay 10X the price of anything reasonable that you can find in a grocery store, good sour. And the smoke is there, but mostly on the exhale. Dovetail does things alright. When I was at the brewery the place was packed. And at the end of the bar was one guy, clearily an employee of the competitor brewery from around the block, enjoying himself with everyone else. Dovetail is where local brewers go to drink good beer. And Flanders Rauch X01 is good. 5 smokestacks good. And my taste buds are dead.
